About Snake River Farms
In the late 1980s after a trip to Japan, the founder of Agri Beef, Robert Rebholtz Sr., first began breeding Japanese Wagyu with high quality American cattle with the goal of bringing something new and exciting to the US market. By 1988, they adopted the first American Wagyu cattle program that was later named Snake River Farms.
Based in Boise, Idaho, the family owned and operated business takes extraordinary care to ensure they produce the highest quality beef. With involvement from start to finish they control their entire supply chain, from the mountain ranches where the cattle are raised, to their humane processing facilities.
Snake River Farms cattle are provided with an all natural diet and never receive any type of growth hormones. They're primarily grass and hay fed, and also consume grains, potatoes, vitamins and minerals. Snake River Farms honours the importance of providing a sanctuary for cattle to graze and thrive happily, ultimately producing the highest quality of beef.
What is American Wagyu?
Award winning chef and Snake River Farms advocate, Wolfgang Puck, describes American Wagyu as having “the richness of Japanese beef with lots of marbling,” with flavour “more akin to what we’re used to in America.”
Snake River Farms American Wagyu is the result of cross-breeding purebred Japanese Wagyu with Northwest American Angus cattle. This produces an exceptional intramuscular marbling with the familiar flavour that we know and love from North American beef.
What grade is Snake River Farms beef?
By the USDA standard, Snake River Farms’ Wagyu grades above Prime, which is the highest classification of beef. They use these principles of quality in combination with Japanese grading systems to determine their Beef Marbling Score (BMS). Snake River Farms’ beef ranges from 6-12, with 9-12 classified as their Gold Grade, the highest possible BMS.
Snake River Farms in Ontario
Locally, the brand was popularised by Toronto's Jacobs & Co. restaurant which had featured Snake River Farms steaks on its menu as early as 2007. Since then, demand for American Wagyu and the Snake River Farms brand has grown exponentially and can now be found in every corner of Ontario.
In 2013, Woodward Meats established a direct relationship with the farm and have since been able to get their beef to our customers while offering lower prices and wider variety of products. To date we've supplied Snake River Farms to over 500 different restaurants, butcher shops, golf courses, hotels and other specialty stores, as well as to the countless individuals who have purchased through the Woodward Meats online store.
