Thaw before cooking.
- For best results, salt liberally the day before cooking.
- Remove porchetta from refrigerator 1 to 2 hours before you intend to cook it.
- Preheat oven to 450ºF.
- Transfer pork to a rimmed baking sheet and roast for 35 minutes.
- Reduce temperature to 325ºF and cook an additional 2 hours and 45 minutes to 4 hours, until a thermometer inserted into the thickest part of the meat reads 180ºF.
- Transfer pork to a cutting board and let the meat rest for 15 to 30 minutes before serving. Sprinkle with finishing salt before serving.
