They are commonly used in dishes such as veal Milanese, a lightly breaded and fried classic from Italy, or Wiener Schnitzel, Austria’s famous golden-brown cutlet. For a sauce-based dish, veal Marsala pairs the cutlet with a rich mushroom and wine reduction, while veal piccata features a bright lemon and caper sauce. These cutlets can also be grilled or roasted for a lighter preparation.
